Crushed Jerseys with Gremolata
Ingredients
250g Jersey Royals
Salt
Olive Oil
Gremolata:
1 clove Garlic
1 tbsp Chopped Flat Leaf Parsley
1 Lemon
1 tbsp Olive Oil
Salt & Pepper
Method
1. Pre heat oven to 190 C
2. Wash potatoes & cook in salted water for approximately 8-10 minutes until just tender but not fully cooked.
3. Drain & leave to steam off for 5 mins
4. Spread on a parchment lined baking tray & using a glass or small bowl carefully press each potato to flatten.
5. Drizzle with olive oil to evenly coat & place in oven for approximately 18 minutes
6. Mix parsley, finely grated garlic, zest of a lemon & the juice of half the lemon in a bowl. Season with salt & pepper & mix in olive oil
7. Once the potatoes are golden & crispy remove from oven & place in a serving dish, spoon over gremolata & serve alone or with grilled chicken
