Jersey Royal, Asparagus & Tomato Tray Bake

 

Ingredients

200g Jersey Royals

Salt & Pepper

Olive Oil

200g Asparagus

200g Mixed Baby Tomatoes

180g Halloumi Cheese

Method

1. Pre heat oven to 180 C

2. Cut potatoes into even pieces place in a roasting tray, season with salt & pepper & drizzle with olive oil. Mix well & place in pre heated oven for 20 mins.

3. Break off woody ends of asparagus & cut in 2. Cut halloumi into dice approx. 1cm.

4. Remove potatoes from oven & add asparagus & baby tomatoes season lightly. Return to oven for 10 minutes before increasing temperature to 200C. Remove the tray from the oven & sprinkle over the halloumi. Cook for a final 5-7 mins until potatoes are cooked through & cheese is caramelised

5. Serve immediately with bread & salad
